Here’s how I make oven chips, no plastic wrapper involved.
Take some new potatoes

I don\’t have time to pre boil them or scrape them. Just wash them and slice long ways into 4’s

Choose an oil or fat that has a high smoke point like rapeseed oil or Trex. Don’t use olive oil as it doesn’t do well at high temperatures.

Heat the oil or Trex in a roasting tin until nice and hot, at least 5 mins at 200 degrees centigrade in my oven.

Toss the chips in the hot oil until well coated and season with salt.

Pop in the oven at 200degrees centigrade for 40 minutes, but at the half way point, take the tin out the oven and turn them.

Return them to the oven and continue cooking until done

Serve as you like. Tonight it’s vegetarian pie, chips and gravy
