Making rice to go with a quick mid week meal is so easy these days when all you have to do is reach for a ready cooked plastic pack, tear open the top and zap it in the microwave.

In my move away from plastic wrapping, ready cooked rice is therefore not an option for me.

Believe me, tinned ready cooked spelt is a bril alternative to ready cooked rice when short on time to cook. Simply turn out into a pan or microwavable dish, zap 2 mins, drain and serve in place of rice.

The best bit is no plastic wrapper!
